Slow-Cooking Pulled Chicken

After a long, busy week of work, going to school, and running kids back and forth between their schools and sports, the last thing I want to do is be in the kitchen on the weekends!
One of my family favorite recipes is Slow-Cooking Pulled Chicken! No… I said chicken, not pork! While my kids are getting ready in the morning for basketball, soccer, or dance, I am in the kitchen loading up my crock pot! Having a crock pot is a life saver for a big family on the go, especially one that is health conscious. Today lots of families hit a fast food chain after a long day of sports or outdoor activities; we on the other hand, come home to a homemade meal that is ready to serve our hungry troops!
Ingredients:
2 -3 lbs raw boneless skinless lean chicken breasts
½ white onion - finely chopped
1 cup canned tomato sauce
1/2 cup ketchup
3 tbsp brown sugar - not packed
3 tbsp Bragg’s apple cider vinegar
2 tsp fresh garlic
Optional: instead of adding tomato sauce, brown sugar, and ketchup, use your favorite BBQ sauce!
Directions:
Place all ingredients except the chicken in the crock pot. Stir until mixed. Add chicken and coat well with the sauce.
Cover and cook on high for 3 - 4 hours OR on low for 7 - 8 hours, until chicken is fully cooked. Shred chicken using two forks.
Serve on whole wheat rolls with your favorite salad in the summer or cup of hot soup in the winter
