Power CookiesGreat balanced energy snack on the go! If watching carb intake, have only one cookie alongside a low carb protein shake. Filling and satisfying!
2 cups oats
3 scoops 100 percent unflavored whey powder (approx 3/4 cup)
1/2 cup ground flaxseeds/flax meal
1/2 cup ground almonds/almond meal
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon sea salt
10 prunes, puréed with 1/4 cup hot water
1/2 banana, mashed
1/2 Fuji apple, shredded & squeezed dry
4 egg whites
1/4 cup craisins; chopped
1/4 cup agave nectar
1 tablespoon pure canola oil
1 teaspoon vanilla extract
Preheat oven to 350 degrees. In large bowl, combine all dry ingredients. Soak prunes for five minutes. Using a blender, purée prunes with hot water. In a separate bowl, mash banana, then whisk in egg whites. Shred apple and squeeze dry in multiple layers of paper towels, then add. Chop craisins (sprinkle small amount of dry ingredients on craisins to help avoid sticking to knife) creating smaller bits to disperse throughout cookies. Add remaining ingredients; mix well. Thoroughly combine wet & dry ingredients. Line baking sheet with parchment paper for easy clean up (spray pan with non-stick spray otherwise). Using large tablespoon, drop heaping spoonfuls of batter onto sheet. Gently flatten slightly.
Bake 10-12 minutes. Cool completely! Store up to five days. No need to completely seal container. Makes approximately 15 medium cookies.
